Annam Red Boiled Rice 5kg
Annam Red Boiled Rice is a parboiled (boiled) red rice in the Kerala matta / rosematta style. The paddy is steamed before milling and the reddish bran layer is left on the grain, giving the rice its distinctive colour, firm bite and warm, nutty flavour.
The everyday rice of Kerala
This is the rice served at home across Kerala and coastal Karnataka — the natural partner for fish curry, sambar, rasam, thoran and moru curry. It is also the traditional choice for kanji (rice porridge) and for puttu and appam batters.
How to cook it
Red boiled rice is a thirstier, slower grain than white rice. Rinse well, then boil in plenty of water for roughly 30–40 minutes until tender, and drain. Soaking for 30 minutes beforehand shortens the cooking time.
