How to Cook Perfect Chinigura Rice for Pulao

Making a traditional Bengali Pulao with this rice is a rewarding experience.

  1. Wash, Don't Soak: Gently wash 1 cup of Deshi Chinigura Rice until the water is mostly clear. Unlike Basmati, this rice is usually not soaked for a long time, if at all, for pulao.
  2. Sauté the Aromatics: In a pot, heat ghee. Sauté whole spices like cinnamoncardamomcloves, and a bay leaf. You can also add sliced onions and sauté until golden.
  3. Toast the Rice: Add the washed and drained rice to the pot. Gently sauté for 1-2 minutes until the grains are coated in ghee and release a beautiful aroma.
  4. Add Liquid: Add approximately 1.75 to 2 cups of hot water or broth for every 1 cup of rice. Add salt to taste.
  5. Cook: Bring to a boil, then immediately reduce the heat to the lowest setting, cover the pot with a tight-fitting lid, and cook for 15-20 minutes, or until all the water is absorbed. Do not open the lid during this time.
  6. Rest: Let the cooked rice stand, covered and off the heat, for at least 10 minutes. Fluff gently with a fork before serving.
